Ingredients:
- 300g firm tofu
- 150ml vegan beef gravy
- 3 tbsp soy sauce
- 1 tsp liquid seasoning
- 1 tbsp pomegranate molasses
- 1 tbsp marmite
- 1 tsp smoked paprika
- 2 tbsp nutritional yeast
- 1 tbsp tomato paste
- 1 tsp oil
- 250g yoghurt (vegan)
- 1 garlic clove
- Mint
- Parsley
- Salt
- Pepper
- 1 lemon
- Cucumber (optional)
- Flatbread
- Red onions
- Coriander
- Pomegranate seeds
- Tahini
Methods:
1. Prepare the tofu marinade by mixing vegan beef gravy, soy sauce, liquid seasoning, pomegranate molasses, marmite, smoked paprika, nutritional yeast, tomato paste, and oil in a bowl.
2. Drain the tofu and add it to the marinade. Fry until the marinade is well absorbed. Optionally, bake on a baking tray for a firmer texture.
3. Prepare the tzatziki by combining vegan yoghurt, minced garlic, mint, chopped parsley, salt, pepper, lemon juice, and grated & drained cucumber (optional) in a bowl.
4. Warm the flatbread.
5. Top the flatbread with tzatziki, crumbled tofu 'beef', red onions, coriander, pomegranate seeds, and tahini.
