### Ingredients

**For the Sauce:**

  • 4 mixed Chiles
  • 1 Large White Onion
  • 6 Cloves Garlic
  • 3 Tbsp Vegetable Oil
  • 4 Cups vegetable stock
  • 3 Whole Peppercorns
  • 1 Tsp Cumin
  • 1 While Clove
  • 1 Tsp Oregano
  • 1 Tsp ground Cinnamon
  • 0.25 Tsp All Spice

**For the Birria Meat:**

  • Vegan meat (e.g., mushroom meat)
  • 1 Can Pinto Beans
  • 2 Tbsp Apple Cider Vinegar
  • 1 Tbsp Smoked Paprika
  • 2 Tsp Garlic Powder
  • 1 Tsp Salt
  • 1 Tbsp Vegetable Oil

**For the Tacos:**

  • 12 Corn/Flour Tacos
  • 1 Cup Vegan Mozzarella
  • Coriander for serving
  • Pickled red onions

### Method

1. Boil the mixed chilies in water.

2. Roast chopped onion and garlic cloves in the oven with 1 Tbsp oil for 20-25 mins until browned.

3. Blend cooked onions, garlic, drained chilies, 1 cup vegetable stock, remaining 2 Tbsp oil, and seasoning for the sauce. Transfer to a saucepan, heat, and simmer until thickened.

4. Coat vegan meat with spices, oil, and seasonings. Fry in a pan for 4-5 mins, then add pinto beans.

5. Add a cup of the simmered sauce to the vegan meat and mix.

6. Dip tacos in the sauce, fry in a skillet, then fill with the vegan meat mix and cheese.

7. Serve with the dipping sauce, coriander, and pickled red onions. Enjoy!
