7 Ingredient Vegan - Week 1


Welcome to another week of NoMeatDisco goodness and Happy New Year!

January can be a tough month. The weather’s still gloomy, the mornings and nights are dark, and we often put way too much pressure on ourselves to tackle every single goal all at once—cue the “new year, new me” mindset. But real change doesn’t have to be rushed; it’s about setting the tone for the whole year ahead.

That’s why I’m here to make your plant-based January as easy and stress-free as possible. These simple, 7-ingredient recipes will save you time and energy, so you can focus on smashing your other goals while still enjoying great, healthy food.

Creamy Gyoza Soup

This is easily one of the most popular recipes you all make—and I can totally see why! It’s one of my personal favorites too. Perfect for warming you up this January, and the best part? It doesn’t take long to whip up.

Ingredients

  • 1tbsp Red Thai Curry Paste
  • 1 packet of Noodles
  • 150ml Plant-based Cream
  • 1 punnet of Mushrooms
  • 1 bunch of Pak Choy
  • 5 Gyoza
  • 3 Cloves of Garlic
  • Extras: 1 stock cube, chilli oil, sesame seeds

Method

  • Fry garlic, Pak choy, and mushrooms in oil for 5 mins.
  • Add red Thai curry paste, stock, and cream. Bring to a boil, season, simmer covered.
  • Fry gyoza until bottoms are crispy. Add stock, cover, cook until liquid dissolves.
  • Add noodles to the soup and cook.
  • Serve soup with noodles, top with gyoza, sesame seeds, and optional chilli oil. Enjoy!

Harissa Honey Eggplant

A perfect balance of sweet, smoky, and spicy, this Harissa Honey Eggplant is a flavor-packed dish that’s as simple as it is satisfying. One of my favorite dishes whilst living in Thailand, I’ve made a quick and easy 7-ingredient Vegan Pad Kra Pao. This recipe is a flavourful delight that can be whipped up in 15 minutes or less. With simple ingredients like firm tofu, Thai basil, garlic, spring onions, chili, sticky rice, soy sauce, and syrup, you'll be amazed at the delicious outcome.
