7 Ingredient Vegan - Week 2

Hey everyone,

Welcome to another week of NoMeatDisco goodness!

I hope your year has started with a bang! It took me about a week to get back into the groove, and honestly, I wasn’t quite ready to dive back into work. A few extra days unplugged in nature would have done me good.

On a brighter note, I’ve kicked off Dry January, and I’m actually loving it! I haven’t even thought about reaching for a drink yet. The plan is to keep it going until March when I’ll be going to Andorra snowboarding and ready to let my (nonexistent) hair down.

Cajun Tofu Flatbread

Imagine smoky, spiced tofu marinated in a Cajun-inspired blend, seared to perfection for that irresistible charred edge, and piled high on soft, fluffy flatbread. Each bite brings a medley of flavors: the deep heat of Cajun seasoning, the freshness of crisp salad greens, and the creamy kick of a tangy vegan yogurt drizzle.

Ingredients

  • Half a block of Tofu
  • 2 tsp Cajun Paste
  • 4 tbsp PB Yoghurt
  • 1 clove of Garlic
  • 1 Flatbread
  • 1 bunch of Parsley
  • 1 Red Chilli
  • 1 tbsp Extra Virgin Olive Oil
  • Pickled Red Cabbage to taste

Method

  • Crumble the tofu and mix it with oil and Cajun paste. Air fry at 200C for 15 minutes or until crispy and charred.
  • Grate the garlic into the yoghurt and mix.
  • Chop parsley and chilli, then mix with EVOO, salt, and pepper.
  • Char the flatbread for 5 minutes. Top with yoghurt, tofu, pickled red cabbage, and chimichurri. Enjoy!
