7 Ingredient Vegan - Week 3

Welcome to another week of NoMeatDisco goodness!
Week three of January—here we are! I hope your month's off to a good start. Everyone loves to talk about January being a time for fresh starts after the chaos of December, but let's not forget—we're still deep in winter. Personally, I think it's a time to slow things down, live life with the seasons, and use this period to reflect, reset, and figure out what you really want for the year ahead. Winter's perfect for easing into good habits and setting realistic goals that you can actually stick to throughout the year.
Speaking of which, I've found that small, positive changes can make a big difference over time. Nothing drastic—just tiny shifts that build momentum. For example, in the second half of last year, I made one simple change: no phone an hour before bed or for the first hour in the morning. The difference it's made to my sleep and productivity has been unreal. If you're looking for a place to start, maybe try adding one small positive habit this month and see how it feels.
This brings me to the next few recipes from Seven Ingredient Vegan. Crispy "Duck" Pancakes
These vegan "duck" pancakes are a delicious twist on the classic takeaway favorite. Made with oyster mushrooms marinated in Hoisin sauce and five spice, they are baked until crispy. Honestly one of my favourite dishes to ever make!
Ingredients

1 punnet Oyster Mushrooms

Half a bottle of Hoisin Sauce

Half a cucumber

2 Spring Onions

6 Duck Pancakes

0.5 cup of Cormstarch

1 tbsp 5 Spice
Method

Pull oyster mushrooms into strips and mix with oil, half of the Hoisin sauce, and five spice in a bowl.

Sprinkle cornstarch over the mushrooms, mix well, and place them on a baking tray. Bake at 180C for 15-20 minutes until crispy.

Slice the cucumber and spring onions.

Toss the baked mushrooms in the remaining Hoisin sauce. Warm up the duck pancakes, then assemble the pancakes with the mushrooms, cucumber, and spring onions. Enjoy!
