A few weeks back, I ran a poll on my Instagram, asking what series you’d most like to see in the future. One of the top contenders was Pickles & Ferments, which I’m already working on. I know, February feels like it’s ages away, and you might be thinking, “How am I supposed to wait that long?” Don’t worry—I gotchu! Over the next few weeks, I’ll be sharing meal prep ideas you can start using now. Hungarian Mushroom Soup

This Hungarian Mushroom Soup was one of my biggest hits last year when I ran the Slurp My Soup series. It’s super delicious and so easy to make! You can freeze containers of it and just cook up some fresh mushrooms when serving, or take it in a flask to work and reheat in the microwave.

I dug this one out of the archives—a classic NoMeatDisco meal prep! I remember I was deep into training for the London Marathon when I made this, and it was a lifesaver.
