Can you believe we’re just three weeks away from Christmas? I hope you’re starting to feel festive—I’m only just getting into the spirit myself this year. I think I peaked too early last year and was completely over it by the big day!
But don’t worry, this year we’re doing it right. Over the next three weeks, I’ve got everything you need to make this Christmas amazing. Each week, you’ll get a number of recipes for every part of the festive feast delivered straight to your inbox. Plus, I’m launching a new series on my socials called The 12 Veggies of Christmas—so keep an eye out for that too!
We’re going to be fully prepared and ready without any panic this year.
To kick things off I’m going to give you some starters and sides. I love the starters sometimes more than the mains at Christmas, we’re going to get creative.
Breakfast
Smoked Carrot “Salmon” Blinis
One of my favourite starters before going plant-based was smoked salmon in a croissant. I can still remember coming downstairs as a kid to the smell of freshly warmed croissants, with my dad pulling them out of the oven. Smothered in butter and topped with smoked salmon—it was unreal.
But don’t worry, I’ve got a recipe that rivals, if not beats, that classic. Get ready to recreate that feeling!

Mushroom Paté
I never forget having patè with cheese, pickles and crackers every year. I prefer a flavourful mushroom paté now. It's so flavourful but less intense than a liver patè, blending earthy mushrooms with creamy textures from kidney beans and cashews, enhanced with aromatic herbs and a hint of spice.
