Ingredients:

  • 1 can black beans
  • 1 block extra firm tofu
  • 2 tsp turmeric
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tsp chipotle paste
  • 25ml oat milk
  • 60g spinach
  • 2 limes
  • 1 avocado
  • Salt and pepper
  • Jar of sun-dried tomatoes
  • Tabasco or hot sauce
  • Large tortilla wraps

Methods:

1. Drain and rinse the black beans.

2. Press the tofu to remove excess moisture, then crumble it into a bowl.

3. Add turmeric, cumin, paprika, chipotle paste, and oat milk to the tofu. Mix well.

4. Cook the tofu mixture in a pan until heated through.

5. Add the spinach and cook until wilted.

6. Squeeze the lime juice over the mixture.

7. Mash the avocado in a separate bowl and season with salt and pepper.

8. Heat the tortilla wraps and assemble the burritos with the tofu mixture, black beans, sun-dried tomatoes, mashed avocado, and hot sauce.

9. Roll up the burritos and serve. Enjoy your dreamy breakfast burrito!
