Ingredients for Thai Green Curry:
- 2 spring onions
- 1 yellow onion
- 4 cloves garlic
- 1 tsp ginger
- 2 stalks lemongrass, chopped
- 4 green chillies
- 0.5 tsp cumin
- 1 big bunch coriander and stalks
- 1 tsp white pepper
- 1 sheet of nori
- Salt
- 1 tbsp chilli oil
- 1 can coconut milk
- Chopped kaffir lime leaves
- 350ml veggie stock
- 1 tbsp soy sauce
- 1 tsp brown sugar
- Juice of a lime
- 0.5 butternut squash
- 0.5 eggplant
- 0.5 block of firm tofu
- 1 pack sugar snap peas
- 1 bunch tenderstem broccoli
- 2 sweet red peppers
- Handful of bean sprouts
- Fresh coriander to top
- Red chilli to top
- Spring onions to top
Method for Thai Green Curry:
1. Blitz all the green curry paste ingredients in a blender to form a paste.
2. Drizzle oil, salt, and Thai seasoning over chopped eggplant, butternut squash, and tofu. Air fry or bake for 15 mins at 190C.
3. Heat oil in a heavy-based pan, add the green curry paste, and cook for 10 minutes.
4. Pour in coconut milk, stock, kaffir lime leaves, and simmer.
5. Add broccoli, red pepper, sugar snaps, and simmer with a lid on for 10-15 mins.
6. Stir in soy sauce, sugar, lime juice, and simmer for another 5 mins.
7. Serve over jasmine rice with bean sprouts, fresh chilli, coriander, and spring onions. Enjoy your Thai Green Curry!
