Gochujang Braised Sweet Potato
I did a similar recipe to this earlier in the year and I just had to bring it back with some new flavours! This was is an absolute staple on the Christmas dinner table and it’s gotta be done people!

- 500g sweet potatoes (peeled and cut into 2cm chunks)
- 1 tbsp neutral oil (e.g., vegetable or sunflower oil)
- 2 tbsp gochujang (Korean chili paste)
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tbsp rice vinegar
- 200ml vegetable stock or water
- 1 tsp sesame oil
- 1 tbsp sesame seeds (toasted)
- 2 spring onions (thinly sliced)
- Fresh coriander leaves (optional)
