I did a similar recipe to this earlier in the year and I just had to bring it back with some new flavours! This was is an absolute staple on the Christmas dinner table and it’s gotta be done people!

Ingredients

  • 500g sweet potatoes (peeled and cut into 2cm chunks)
  • 1 tbsp neutral oil (e.g., vegetable or sunflower oil)
  • 2 tbsp gochujang (Korean chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 200ml vegetable stock or water
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds (toasted)
  • 2 spring onions (thinly sliced)
  • Fresh coriander leaves (optional)
