  • 1 medium sweetheart or savoy cabbage (cut into wedges, core intact to hold wedges together)
  • 2 tbsp olive oil
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 3 tbsp smooth peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup or agave nectar
  • 1 tsp sesame oil
  • 0.5 tsp grated fresh ginger
  • 1 small garlic clove, minced
  • 2–3 tbsp warm water (to thin the dressing)
  • 1 tbsp toasted sesame seeds
  • 2 tbsp crushed toasted almonds
  • 1 spring onion, finely sliced
  • Crispy chilli oil
