- 1 medium sweetheart or savoy cabbage (cut into wedges, core intact to hold wedges together)
- 2 tbsp olive oil
- 0.5 tsp sea salt
- 0.25 tsp black pepper
- 3 tbsp smooth peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp maple syrup or agave nectar
- 1 tsp sesame oil
- 0.5 tsp grated fresh ginger
- 1 small garlic clove, minced
- 2–3 tbsp warm water (to thin the dressing)
- 1 tbsp toasted sesame seeds
- 2 tbsp crushed toasted almonds
- 1 spring onion, finely sliced
- Crispy chilli oil
