- 0.5 Cup beetroot juice
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- ½ tsp garlic powder
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 1 small shallot, finely minced
- 1 garlic clove, minced
- 1 cup dry red wine
- 0.5 cup vegetable stock
- 1 tbsp balsamic vinegar
- 2 sprigs fresh thyme
- 1 tbsp vegan butter (optional, for richness)
- Salt and pepper to taste
